  • 1 cup almond flour
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out the excess moisture.
  3. In a bowl, combine the drained zucchini, almond flour, eggs, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and baking powder. Mix until well combined.
  4. Divide the mixture into bagel shapes on the prepared baking sheet, making a hole in the center of each one.
Baking
  1. Bake for 25-30 minutes, or until golden brown.
  2. Allow to cool slightly before serving.

Notes

Ensure moisture is removed from the zucchini to avoid soggy bagels. Try adding your favorite herbs and spices for customization. Experiment with different cheeses like cheddar or feta.
