- Lay the tortilla flat on a clean surface.
- Spread hummus evenly over the tortilla.
- Add fresh spinach, cucumber slices, grated carrots, bell pepper slices, and avocado.
- Sprinkle with salt and pepper.
- Roll the tortilla tightly from one end to make a wrap.
- Slice in half and serve or wrap in foil for later.
Notes
Wrap each wrap tightly in foil or plastic wrap and store in the fridge for up to 2 days. For best texture, eat within a day if avocado is inside. They are great warm or chilled. Serve with a side of salsa, extra hummus, or a simple salad.
