Casserole Ingredients
  • 2 cups frozen hash browns Use thawed or slightly thawed to avoid watery mix.
  • 1 cup vegan sausage crumbles Use your preferred flavor.
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup spinach
  • 1 cup almond milk Can substitute with oat milk.
  • 1 tablespoon nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste Taste and adjust before baking.
  • Olive oil for greasing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Grease a casserole dish with olive oil.
  3. In a mixing bowl, combine the frozen hash browns, vegan sausage crumbles, diced bell peppers, diced onions, spinach, almond milk, nutritional yeast, garlic powder, onion powder, salt, and pepper.
  4. Pour the mixture into the prepared casserole dish.
  5. Bake for 30-35 minutes or until the top is golden brown and the casserole is heated through.
  6. Let cool for a few minutes before serving. Cut into squares and serve warm.

Notes

Cool the casserole fully before storing. Store leftovers in an airtight container for up to 4 days. To freeze, wrap tightly and freeze for up to 2 months. Thaw overnight before reheating.
