Preparation
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- Tear the bread into pieces and place them in the baking dish.
- In a bowl, mix together almond milk, maple syrup, flaxseed, vanilla, cinnamon, and nutmeg until well combined.
- Pour the mixture over the bread, ensuring all pieces are well soaked.
- Let it sit for about 15 minutes to absorb the liquid.
Baking
- Bake in the preheated oven for 30-35 minutes until golden brown.
- Serve warm, topped with fresh fruit and a dusting of powdered sugar if desired.
Notes
Cool the casserole fully, then cover and store in the fridge for up to 4 days. Reheat slices in the oven at 325°F (160°C) for 10–15 minutes or in the microwave for a short time. You can also freeze baked pieces in a freezer bag for up to 1 month. For quicker prep, cube the bread instead of tearing.
