  • 1 loaf loaf of bread (stale or day-old bread works best) Use day-old or slightly stale bread for better soaking.
  • 1 cup almond milk (or any plant-based milk) Any plant milk can be used.
  • 1/4 cup maple syrup Adds sweetness to the dish.
  • 1/4 cup ground flaxseed Acts as an egg substitute.
  • 1 teaspoon vanilla extract For flavor.
  • 1 teaspoon cinnamon Adds spice.
  • 1/4 teaspoon nutmeg Enhances flavor.
  • Fresh fruit (berries, bananas, etc. for topping) Optional toppings.
  • Powdered sugar (for serving, optional) Optional garnish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Tear the bread into pieces and place them in the baking dish.
  3. In a bowl, mix together almond milk, maple syrup, flaxseed, vanilla, cinnamon, and nutmeg until well combined.
  4. Pour the mixture over the bread, ensuring all pieces are well soaked.
  5. Let it sit for about 15 minutes to absorb the liquid.
Baking
  1. Bake in the preheated oven for 30-35 minutes until golden brown.
  2. Serve warm, topped with fresh fruit and a dusting of powdered sugar if desired.

Notes

Cool the casserole fully, then cover and store in the fridge for up to 4 days. Reheat slices in the oven at 325°F (160°C) for 10–15 minutes or in the microwave for a short time. You can also freeze baked pieces in a freezer bag for up to 1 month. For quicker prep, cube the bread instead of tearing.
