Ingredients
  

For the Biscuits
  • 2 cups all-purpose flour Use gluten-free flour for a gluten-free option.
  • 1 tablespoon baking powder Ensure it's gluten-free if needed.
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil or vegan butter Keep cold for flakier biscuits.
  • 1 cup plant-based milk Unsweetened almond, soy, or oat milk can be used.
For the Gravy Filling
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup mushrooms diced, variety can be swapped.
  • 1 cup plant-based sausage crumbled, use preferred brand.
  • 2 cups vegetable broth
  • 1/4 cup nutritional yeast Adds savory flavor.
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a casserole dish.
  2. In a bowl, mix the flour, baking powder, and salt. Cut in the coconut oil until crumbly, then stir in the plant-based milk until just combined.
  3. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent, then add mushrooms and plant-based sausage, cooking until browned.
  4. In another bowl, whisk together vegetable broth and nutritional yeast. Season with salt and pepper.
  5. Layer the biscuit mixture, the sausage and mushroom mixture, and pour the broth mixture evenly over the top.
  6. Bake for 25-30 minutes or until golden brown.
  7. Garnish with parsley and serve warm.

Notes

Keep ingredients cold for flakier biscuits. Taste the gravy before baking to adjust seasoning. Options include adding bell peppers or spinach to the filling.
