Preparation
- Preheat the oven to 350°F (175°C) and grease a casserole dish.
- In a bowl, mix the flour, baking powder, and salt. Cut in the coconut oil until crumbly, then stir in the plant-based milk until just combined.
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent, then add mushrooms and plant-based sausage, cooking until browned.
- In another bowl, whisk together vegetable broth and nutritional yeast. Season with salt and pepper.
- Layer the biscuit mixture, the sausage and mushroom mixture, and pour the broth mixture evenly over the top.
- Bake for 25-30 minutes or until golden brown.
- Garnish with parsley and serve warm.
Notes
Keep ingredients cold for flakier biscuits. Taste the gravy before baking to adjust seasoning. Options include adding bell peppers or spinach to the filling.
