Preparation
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced mushrooms and sauté until they are golden brown.
  3. Sprinkle in the garlic powder, smoked paprika, sea salt, and black pepper; stir to combine.
  4. Meanwhile, cook the French fries according to package instructions.
  5. In a separate pan, fry the eggs sunny-side up.
  6. Once the fries are cooked, plate them and top with the mushroom sauce and fried eggs.

Notes

Serve the fries hot on a plate or in a shallow bowl. Break the yolks to mix with mushrooms and fries. Store leftover mushroom sauce in an airtight container in the fridge for up to 3 days. Keep fries separate if possible to maintain crispness.
