- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced chicken and cook until browned and cooked through.
- Add garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream, spinach, cherry tomatoes, and Parmesan cheese.
- Let it simmer for about 5 minutes until the sauce thickens slightly.
- Add the cooked pasta to the skillet and toss to coat.
- Season with salt and pepper to taste.
- Garnish with fresh basil before serving.
Notes
Cool the pasta to room temperature for up to 1 hour before storing in an airtight container. It can be refrigerated for 3 to 4 days. Reheat on the stove over low heat with a splash of broth or cream to bring back the sauce.
