Pasta and Sauce Ingredients
  • 1 package cheese tortellini Use fresh for best texture, but frozen works too.
  • 1 pound Italian sausage Casings removed.
  • 1 tablespoon olive oil
  • 3 cloves garlic (minced)
  • 1 cup diced tomatoes Canned or fresh.
  • 1 cup heavy cream Use half-and-half for a lighter sauce.
  • 1 cup spinach (optional) Stir in until wilted.
  • Salt and pepper To taste.
  • Parmesan cheese For serving.

Method
 

Preparation
  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sausage and cook until browned, breaking it apart with a spoon.
  3. Stir in the garlic and cook for about 1 minute until fragrant.
  4. Add the diced tomatoes and bring to a simmer.
  5. Stir in the heavy cream and let it all combine.
  6. Add the cheese tortellini and cook according to package instructions until tender.
  7. If using, stir in the spinach until wilted.
  8. Season with salt and pepper to taste, and serve with grated Parmesan cheese on top.

Notes

Serve hot. A simple side salad or crusty bread pairs well. Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 2 months; texture may change after thawing. For variations, use turkey sausage, add mushrooms or use milk instead of heavy cream.
