- In a large skillet, heat olive oil over medium heat.
- Add the sausage and cook until browned, breaking it apart with a spoon.
- Stir in the garlic and cook for about 1 minute until fragrant.
- Add the diced tomatoes and bring to a simmer.
- Stir in the heavy cream and let it all combine.
- Add the cheese tortellini and cook according to package instructions until tender.
- If using, stir in the spinach until wilted.
- Season with salt and pepper to taste, and serve with grated Parmesan cheese on top.
Notes
Serve hot. A simple side salad or crusty bread pairs well. Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 2 months; texture may change after thawing. For variations, use turkey sausage, add mushrooms or use milk instead of heavy cream.
