Preparation
- In a medium saucepan, combine granulated sugar, cold water, and corn syrup.
- Cook over medium heat, stirring gently until sugar dissolves.
- Increase heat and bring to a boil without stirring until the mixture turns a deep amber color.
- Carefully add the heavy cream (it will bubble up).
- Stir until smooth, then remove from heat and add sea salt and vanilla extract.
- Allow to cool before using or storing.
Notes
Store the sauce in an airtight container in the refrigerator for up to two weeks. Warm it gently before using.
