  • 2 tablespoons corn syrup Prevents crystallization during cooking.
  • 1 cup heavy cream Add carefully as it will bubble up.
  • 1 teaspoon sea salt For seasoning.
  • 1 teaspoon vanilla extract Can be substituted with other extracts for variation.

Preparation
  1. In a medium saucepan, combine granulated sugar, cold water, and corn syrup.
  2. Cook over medium heat, stirring gently until sugar dissolves.
  3. Increase heat and bring to a boil without stirring until the mixture turns a deep amber color.
  4. Carefully add the heavy cream (it will bubble up).
  5. Stir until smooth, then remove from heat and add sea salt and vanilla extract.
  6. Allow to cool before using or storing.

Notes

Store the sauce in an airtight container in the refrigerator for up to two weeks. Warm it gently before using.
