  • 1 medium red bell pepper, sliced

  • 1/4 cup green onions, sliced
  • 1/2 cup peanuts, crushed For topping before serving.
For the Dressing
  • 1/2 cup peanut butter Creamy peanut butter is recommended.
  • 3 tablespoons soy sauce Use low-sodium soy sauce if preferred.
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar Increase for a tangier flavor.
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the shredded chicken, cabbage, grated carrots, sliced red bell pepper, chopped cilantro, and sliced green onions.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, salt, and pepper until smooth.
  3. Pour the peanut dressing over the salad mixture and toss everything together to combine.
  4. Top the salad with crushed peanuts before serving.
