  • 1 cup peach preserves Can substitute with other fruit preserves like apricot or mango.
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 clove garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp red pepper flakes (optional) Adjust to taste.
  • Salt and pepper to taste
For serving
  • Cooked rice Pairs well with steamed rice.
  • Fresh veggies Can include bell peppers or snap peas.

Preparation
  1. Season the chicken breasts with salt and pepper.
Cooking
  1. In a skillet, heat a little oil over medium heat and add the chicken. Cook until golden and cooked through, about 6-7 minutes per side.
  2. In a bowl, mix together peach preserves, soy sauce, fish sauce, garlic, ginger, and red pepper flakes.
  3. Pour the peach sauce over the chicken in the skillet and simmer for another 2-3 minutes until the sauce thickens.
Serving
  1. Serve the Thai Peach Chicken over rice or alongside fresh veggies.

Notes

For a spicier kick, increase the amount of red pepper flakes. Marinate chicken in peach sauce for 30 minutes before cooking for deeper flavor. Store leftovers in an airtight container for 3-4 days.
