Preparation
- Season the chicken breasts with salt and pepper.
Cooking
- In a skillet, heat a little oil over medium heat and add the chicken. Cook until golden and cooked through, about 6-7 minutes per side.
- In a bowl, mix together peach preserves, soy sauce, fish sauce, garlic, ginger, and red pepper flakes.
- Pour the peach sauce over the chicken in the skillet and simmer for another 2-3 minutes until the sauce thickens.
Serving
- Serve the Thai Peach Chicken over rice or alongside fresh veggies.
Notes
For a spicier kick, increase the amount of red pepper flakes. Marinate chicken in peach sauce for 30 minutes before cooking for deeper flavor. Store leftovers in an airtight container for 3-4 days.
