Preparation
- In a bowl, whisk together the coconut milk, honey, lime juice, garlic, soy sauce, salt, and pepper to create the marinade.
- Place the chicken breasts in a zip-top bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes or up to 4 hours.
Cooking
- Preheat the grill or oven to 375°F (190°C).
- Remove the chicken from the marinade and discard the marinade.
- For grilling, cook the chicken on medium-high heat for about 6-7 minutes per side, or until fully cooked. For baking, place the chicken on a baking sheet and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before serving.
Notes
Leftovers can be stored in an airtight container in the fridge for up to three days. To reheat, simply use the microwave or an oven until heated through. If you want to store it for a longer time, consider freezing it in portions. Just make sure to thaw it in the fridge before reheating. For a more intense flavor, marinate the chicken overnight. Feel free to add vegetables to the grill or baking sheet, like bell peppers or zucchinis.
