Ingredients
  

For the Marinade
  • 1/4 cup soy sauce Use low-sodium for a lighter option
  • 1/4 cup brown sugar Packed
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
For the Skewers
  • 1 lb chicken breast, cut into cubes Use boneless, skinless pieces
  • Vegetables of your choice (bell peppers, onions, zucchini) Mix and match to taste
  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes before grilling

Preparation
  1. In a bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger to create the marinade.
  2. Add the chicken cubes to the marinade and let sit for at least 30 minutes.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Thread marinated chicken and vegetables onto skewers.
  3. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  4. Serve warm and enjoy your Teriyaki Chicken Skewers!

Notes

For best flavor, marinate the chicken overnight if you have time. You can also add shrimp or tofu as protein alternatives.
