  • 1 bag (32 oz) frozen tater tots Use standard size bags for best results.
  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 can cream of chicken soup Can substitute with cream of mushroom or celery.
  • 1 cup shredded cheddar cheese Feel free to swap for pepper jack for spice.
  • 1 cup milk
  • 1 cup frozen mixed vegetables Thaw if clumped.
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the chicken, cream of chicken soup, milk, mixed vegetables, salt, and pepper.
  3. Spread the chicken mixture evenly in a greased 9x13 inch baking dish.
  4. Arrange the tater tots on top of the chicken mixture in a single layer.
  5. Sprinkle shredded cheddar cheese over the tater tots.
  6. Bake in the preheated oven for 30-40 minutes, or until the tater tots are golden brown and crispy.
  7. Let cool for a few minutes before serving.

Notes

Cut into squares and serve hot. Pair with a simple side salad or steamed green beans. A dollop of sour cream or a sprinkle of green onions works well too. Store leftovers in the fridge for up to 3 days. To reheat, warm in the oven at 350°F (175°C) until heated through, about 15-20 minutes.
