  • 2 cups cooked, shredded chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen mixed vegetables (optional)
  • 1 package (32 oz) Tater Tots
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, shredded cheese, and optional mixed vegetables. Season with salt and pepper.
  3. Spread the chicken mixture evenly in a greased 9x13 inch baking dish.
  4. Top with Tater Tots, arranging them in a single layer over the chicken mixture.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the Tater Tots are golden brown and crispy.
  2. Remove from the oven and let cool slightly before serving.

Notes

Use fully cooked shredded chicken to save time. Drain any extra liquid from the chicken to keep the casserole from getting soggy. Arrange tater tots close but not stacked for crispness. Add extra cheese on top for a golden crust. If using frozen mixed veggies, no need to thaw them first. Store in the fridge for up to 3-4 days or freeze for up to 2 months.
