A quick and filling casserole made with seasoned ground beef, beans, corn, salsa, cheese, and crispy tater tots, perfect for family dinners.

Main Ingredients
  • 1 lb Ground beef Use lean ground beef for a less greasy casserole.
  • 1 can Black beans Drain and rinse before adding.
  • 1 cup Corn, frozen or canned No need to thaw if using frozen.
  • 1 cup Salsa Use more for a saucier casserole.
  • 1 packet Taco seasoning Adjust amount for less spice if needed.
  • 2 cups Cheese, shredded Cheddar or pepper jack can be used.
  • 1 bag Tater tots Use straight from the bag for a crisp top.
  • 1/2 cup Sour cream For serving and garnishing.
  • 1 each Green onion, chopped For garnishing.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Stir in black beans, corn, salsa, and taco seasoning. Mix well.
  4. In a greased baking dish, spread the beef mixture evenly.
  5. Top with tater tots followed by shredded cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the tater tots are golden brown and crispy.
Serving
  1. Serve hot, garnished with sour cream and chopped green onions.

Notes

Cool the casserole to room temperature before storing. Refrigerate for up to 3 days. Can be frozen for up to 2 months. Thaw overnight before reheating.
