Preparation
- Preheat your oven to 375°F (190°C).
- In a blender, combine the raspberries, raspberry jam, soy sauce, and chopped jalapeños to make the glaze. Blend until smooth.
- Season the chicken breasts with salt and pepper.
Cooking
- Heat olive oil in a skillet over medium-high heat and sear the chicken on both sides until browned.
- Place the seared chicken in a baking dish and pour the glaze over it.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
Notes
To enhance flavors, adding lime juice to the glaze works well. Serve leftover glaze on the side for dipping. Adjust the spice level by using fewer jalapeños or removing the seeds.
