  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, sugar, milk, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well until smooth.
  3. Pour the sweet potato filling into the pre-made pie crust.
Baking
  1. Bake in the preheated oven for 45–50 minutes, or until the filling is set and a knife inserted in the center comes out clean.
  2. Allow to cool before serving.

Notes

Serve at room temperature or chilled. Top with whipped cream or ice cream and a sprinkle of cinnamon. To store, cover lightly at room temperature for up to 2 days, in the fridge for 4-5 days, or freeze tightly for up to 1 month.
