Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce Can use low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic, minced Fresh garlic recommended
  • 1 tablespoon fresh ginger, minced Fresh ginger recommended
Thickening Agent
  • 1 tablespoon cornstarch
  • 1 tablespoon water
Seasoning & Garnish
  • Salt and pepper to taste
  • Chopped green onions for garnish

Method
 

Preparation
  1. In a bowl, mix pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  2. Place the chicken breasts in the crock pot and pour the sauce over them.
Cooking
  1. Cook on low for 4-6 hours or until the chicken is tender.
  2. Once cooked, remove the chicken and shred it.
  3. Mix cornstarch and water in a small bowl; add to the sauce in the crock pot to thicken.
  4. Return shredded chicken to the pot and stir to combine.
  5. Season with salt and pepper to taste, then serve garnished with chopped green onions.

Notes

Let the chicken cool before storing. It can be kept in an airtight container in the fridge for up to 3 days or frozen for up to 3 months. Use fresh ingredients for best flavor and be cautious not to overcook the chicken.
