  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pineapple chunks Use fresh or canned.
  • 1 cup barbecue sauce
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar Can reduce or skip.
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Cooked rice for serving
  • Chopped green onions for garnish

Method
 

Cooking Instructions
  1. Place the chicken breasts in the crock pot.
  2. In a bowl, combine the pineapple chunks, barbecue sauce, soy sauce, brown sugar, minced garlic, and ground ginger.
  3. Pour the sauce over the chicken in the crock pot.
  4. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  6. Shred the chicken in the sauce before serving.
  7. Serve over cooked rice and garnish with chopped green onions.

Notes

Let the chicken cool to room temperature and store in an airtight container in the fridge for up to 4 days. Reheat gently. Freezing leftovers in a freezer-safe container is possible for up to 3 months.
