Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the sweet potatoes into chunks. Boil them in salted water until fork-tender, about 15 minutes.
  3. Drain the potatoes and place them on a baking sheet lined with parchment paper.
  4. Smash the sweet potatoes with a fork or potato masher to create a rustic texture.
Cooking
  1. In a small bowl, mix the olive oil, honey (or maple syrup), sriracha (or chili powder), salt, and pepper.
  2. Drizzle this glaze over the smashed sweet potatoes.
  3. Roast in the oven for about 20 minutes, or until the edges are crispy and golden.
  4. Remove from the oven, garnish with fresh herbs if desired, and serve hot.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave with a little drizzle of olive oil to keep them moist.
