Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Season the chicken thighs with salt and pepper. Add them to the skillet and cook until browned on both sides.
  3. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the sliced onion and minced garlic. Cook until they are softened.
  5. Pour in the apple cider and sprinkle in the thyme. Scrape the bottom of the pan to release any brown bits for extra flavor.
  6. Return the chicken to the skillet, reduce the heat to low, and cover.
  7. Simmer the chicken for about 25-30 minutes, or until it is cooked through.
Serving
  1. Serve the chicken with roasted vegetables or creamy mashed potatoes for a complete meal.

Notes

Feel free to modify the seasonings to suit your taste. Adding a pinch of cinnamon can give it an extra fall flair. Make sure not to overcook the chicken, as it can become dry. Use a meat thermometer to check that it reaches an internal temperature of 165°F. For added flavor, marinate the chicken in apple cider and thyme for a few hours before cooking.
