- In a large skillet, heat the olive oil over medium heat.
- Season the chicken thighs with salt and pepper. Add them to the skillet and cook until browned on both sides.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, add the sliced onion and minced garlic. Cook until they are softened.
- Pour in the apple cider and sprinkle in the thyme. Scrape the bottom of the pan to release any brown bits for extra flavor.
- Return the chicken to the skillet, reduce the heat to low, and cover.
- Simmer the chicken for about 25-30 minutes, or until it is cooked through.

- Serve the chicken with roasted vegetables or creamy mashed potatoes for a complete meal.
Notes
Feel free to modify the seasonings to suit your taste. Adding a pinch of cinnamon can give it an extra fall flair. Make sure not to overcook the chicken, as it can become dry. Use a meat thermometer to check that it reaches an internal temperature of 165°F. For added flavor, marinate the chicken in apple cider and thyme for a few hours before cooking.
