  • 2 pieces chicken breasts Boneless, skinless preferred
  • 1 cup fresh spinach, chopped Use fresh for best flavor
  • 1 can artichoke hearts, drained and chopped Canned or frozen both work
  • 1 cup cottage cheese Can substitute with Greek yogurt
  • 1 cup shredded mozzarella cheese For topping
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste Salt and pepper Adjust according to preference

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chopped spinach and artichoke hearts, cooking until spinach wilts.
  4. In a bowl, combine the cottage cheese, mozzarella, salt, and pepper.
  5. Place chicken breasts in a baking dish and season with salt and pepper.
  6. Top each chicken breast with the spinach-artichoke mixture and cottage cheese blend.
  7. Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  8. Serve hot and enjoy your wholesome meal.

Notes

Pairs well with a side salad or steamed vegetables. Can also be served with brown rice or quinoa. Store leftovers in an airtight container in the refrigerator for up to three days. Can freeze for longer storage.
