  • 1 lb steak tips (sirloin or ribeye, bite-sized pieces)
  • 12 oz fettuccine pasta
  • 1 tbsp olive oil
  • 1.5 tsp Cajun seasoning
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • to taste Salt & black pepper
Sauce Ingredients
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella
  • 0.5 cup grated Parmesan
  • 0.5 tsp red pepper flakes (optional) for extra heat
  • 0.5 cup reserved pasta water (as needed) to adjust sauce thickness
  • Fresh parsley for garnish
  • Extra Parmesan for garnish
  • Sprinkle of Cajun seasoning for garnish

Method
 

Cooking the Pasta
  1. Boil fettuccine in salted water until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
Preparing the Steak
  1. Pat steak tips dry and season with Cajun seasoning, paprika, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear steak tips 2–3 minutes per side until browned and cooked to your preferred doneness. Remove and set aside.
Making the Sauce
  1. In the same skillet, melt butter over medium heat, add garlic and sauté until fragrant (~30 seconds).
  2. Pour in heavy cream, stirring gently, then add mozzarella and Parmesan. Stir until smooth and creamy.
  3. Add red pepper flakes for heat and reserved pasta water if you want a thinner sauce.
Combining and Serving
  1. Toss cooked fettuccine in the creamy sauce and return steak tips to the skillet, folding gently into the pasta.
  2. Plate fettuccine with steak tips on top, garnished with parsley, extra Parmesan, and a light sprinkle of Cajun seasoning.

Notes

Pat the steak dry before seasoning for a better sear. Use fresh grated Parmesan for better melt and flavor. If you want milder food, reduce or skip the red pepper flakes.
