Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, combine cooked chicken, black beans, corn, chili powder, cumin, salt, and pepper.
- Lay out the flour tortillas and fill each with the chicken mixture and a sprinkle of cheese.
- Roll the tortillas tightly and place them seam-side down in a baking dish.
- Pour enchilada sauce over the top of the burritos and sprinkle remaining cheese on top.
Baking
- Bake for 20-25 minutes until heated through and cheese is bubbly.
- Serve warm with sour cream and green onions if desired.
Notes
Cool burritos to room temperature before refrigeration. Store in an airtight container for up to 3 days. To freeze, wrap each burrito in foil for up to 2 months. Reheat in oven or microwave as needed. For another easy chicken side idea, try chicken lollipops.
