Main Ingredients
  • 1 pound ground beef or turkey Use ground turkey for a lighter version.
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained Rinse to reduce salt.
  • 1 can (15 oz) kidney beans, rinsed and drained Rinse to reduce salt.
  • 1 can (15 oz) corn, drained No need to rinse.
  • 1 can (28 oz) crushed tomatoes
  • 1 packet taco seasoning For homemade options, use your favorite mix.
  • 2 cups beef or chicken broth Use low-sodium broth if concerned about salt.
  • to taste Salt and pepper Adjust to preference.

Method
 

Preparation
  1. In a skillet, brown the ground beef or turkey. Drain excess fat.
  2. Add the cooked meat to a slow cooker along with diced onion, minced garlic, black beans, kidney beans, corn, crushed tomatoes, taco seasoning, and broth.
  3. Stir well to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. Taste and adjust seasoning with salt and pepper.
Serving
  1. Ladle the soup into bowls. Add shredded cheese, a dollop of sour cream, diced avocado, and crushed tortilla chips on top.
  2. Serve with warm bread or tortillas.

Notes

Brown the meat well to add flavor. Stir once during cooking if you can, but it is not needed. For a different version, you can use fresh tomatoes, add chopped bell peppers for crunch, or make it spicier with jalapeƱos or hot sauce.
