Preparation
- In a skillet, brown the ground beef or turkey. Drain excess fat.
- Add the cooked meat to a slow cooker along with diced onion, minced garlic, black beans, kidney beans, corn, crushed tomatoes, taco seasoning, and broth.
- Stir well to combine.
Cooking
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Taste and adjust seasoning with salt and pepper.
Serving
- Ladle the soup into bowls. Add shredded cheese, a dollop of sour cream, diced avocado, and crushed tortilla chips on top.
- Serve with warm bread or tortillas.
Notes
Brown the meat well to add flavor. Stir once during cooking if you can, but it is not needed. For a different version, you can use fresh tomatoes, add chopped bell peppers for crunch, or make it spicier with jalapeƱos or hot sauce.
