Preparation
  1. In a bowl, mix together the lemon juice, olive oil, lemon zest, black pepper, garlic powder, onion powder, and salt.
  2. Place the chicken thighs in the slow cooker and pour the lemon pepper mixture over them, ensuring they are well coated.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  2. Once done, serve the chicken thighs with your choice of sides, and garnish with fresh parsley if desired.

Notes

Serve with steamed vegetables, rice, or a light salad. For extra flavor, marinate the chicken in the lemon mixture for a couple of hours before cooking. You can add carrots or potatoes to the slow cooker for a complete meal. Adjust the seasoning to your taste.
