  • 2 cups diced ham Use good quality ham for better flavor.
  • 4 cups diced potatoes Cut into even pieces for uniform cooking.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream Add at the end to prevent curdling.
  • 1 teaspoon thyme
  • 1 cup shredded carrots
  • to taste Salt and pepper Taste and adjust near the end.
  • Chopped green onions for garnish Add extra for serving.

Method
 

Preparation
  1. In a slow cooker, combine the diced ham, potatoes, onion, garlic, and carrots.
  2. Pour in the chicken broth and season with thyme, salt, and pepper.
Cooking
  1. Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  2. Stir in the heavy cream before serving.
  3. Garnish with chopped green onions.

Notes

For a thicker soup, try mashing some potatoes in the pot or adding a slurry of flour and water. You can freeze leftovers for up to 2 months.
