  • 2 lbs chicken breasts
  • 1 lb baby potatoes, halved Use similar-sized potatoes for even cooking.
  • 2 cups broccoli florets Add about 30 minutes before the end of cooking.
  • 1 cup heavy cream Can be swapped with half-and-half for a lighter sauce.
  • 1 cup grated parmesan cheese Parmesan gives a rich flavor but can be substituted with another hard cheese.
  • 4 cloves garlic, minced Rub garlic on the chicken for extra flavor.
  • 1 teaspoon Italian seasoning
  • Salt to taste salt and pepper Salt lightly at first, as parmesan adds salt.

Preparation
  1. In a slow cooker, combine the chicken, potatoes, garlic, and Italian seasoning. Season with salt and pepper.
  2. In a bowl, mix the heavy cream and parmesan cheese, then pour over the chicken and potatoes.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, add the broccoli.
  3. Once cooked, stir to combine and serve hot.

Notes

Cool to room temperature before storing. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat gently to keep the sauce smooth.
