  • 2 pounds beef chuck roast
  • 1 large onion, sliced
  • 1 cup beef broth
  • 1 cup water
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • 4 pieces hoagie rolls
  • 8 slices provolone cheese
  • Salt and pepper to taste

Method
 

Preparation
  1. Place the beef roast in the slow cooker and season with salt and pepper.
  2. Add the sliced onion, beef broth, water, soy sauce, garlic powder, and Worcestershire sauce.
  3. Cover and cook on low for 8 hours or until the beef is tender.
  4. Once cooked, shred the beef with two forks and stir it back into the broth.
Serving
  1. Load the beef and onions onto hoagie rolls, top with a slice of provolone cheese, and place under a broiler until the cheese melts.
  2. Serve with the broth on the side for dipping.

Notes

Season the roast well with salt and pepper before cooking. Optional: Sear the roast in a hot pan for more flavor, then add to the slow cooker. Shred the beef with two forks for the best texture. If the broth is thin, simmer it on the stove to reduce and concentrate flavor. Warm the rolls before adding the beef so they do not get soggy.
