  • 1 teaspoon lime zest Enhances lime flavor.
  • 2 cloves garlic, minced Fresh garlic for best flavor.
  • 1 teaspoon cumin Adds warmth to the dish.
  • 1 teaspoon salt Season to taste.
  • 1/2 teaspoon black pepper Season to taste.
  • 1/2 cup chicken broth Helps keep chicken moist during cooking.

Method
 

Cooking
  1. Place the chicken breasts in the slow cooker.
  2. In a small bowl, mix together cilantro, lime juice, lime zest, garlic, cumin, salt, and black pepper.
  3. Pour this mixture over the chicken in the slow cooker.
  4. Add the chicken broth to the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked.
  6. Shred the chicken with two forks and stir well to combine with the liquids.
Serving
  1. Serve over rice, in tacos, or on salads.

Notes

For extra flavor, consider marinating the chicken in the cilantro and lime mixture for a few hours before cooking. For heat, add chopped jalapeƱos. Various spices can be used for variation.
