- Place the chicken breasts in the slow cooker.
- In a small bowl, mix together cilantro, lime juice, lime zest, garlic, cumin, salt, and black pepper.
- Pour this mixture over the chicken in the slow cooker.
- Add the chicken broth to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked.
- Shred the chicken with two forks and stir well to combine with the liquids.
Serving
- Serve over rice, in tacos, or on salads.
Notes
For extra flavor, consider marinating the chicken in the cilantro and lime mixture for a few hours before cooking. For heat, add chopped jalapeƱos. Various spices can be used for variation.
