  • 1 package package of vegan breakfast sausage
  • 1 cup cup of vegan cheese Any meltable vegan cheese will work.
  • 6 cups cups of cubed bread (preferably whole grain) Day-old bread is best for soaking up the liquid.
  • 1 cup cup of plant milk Almond, soy, or oat milk can be used.
  • 4 tablespoons tablespoons of nutritional yeast
  • 1 teaspoon teaspoon of garlic powder
  • 1 teaspoon teaspoon of onion powder
  • Salt and pepper to taste
  • Chopped fresh herbs (optional, e.g., parsley or chives) For garnish.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cubed bread, vegan breakfast sausage, and vegan cheese.
  3. In another bowl, whisk together the plant milk, nutritional yeast, garlic powder, onion powder, salt, and pepper.
  4. Pour the wet mixture over the bread mixture, stirring to ensure everything is coated.
  5. Let it sit for 10 minutes to absorb the liquid.
  6. Transfer the mixture to a greased baking dish and spread it out evenly.
  7. Bake for 30-35 minutes until the top is golden brown.
  8. Optionally, garnish with fresh herbs before serving.

Notes

Use day-old bread to soak up the liquid better. Taste the wet mix and adjust seasoning as needed. For a crisp top, broil for 1–2 minutes at the end, watching closely. Add chopped veggies for more color and nutrition.
