  • 1 pound sausage Use fully cooked sausage to save time.
  • 4 medium potatoes, peeled and diced Cut potatoes into the same size so they cook evenly.
  • 1 pound green beans, trimmed If frozen, thaw and drain before adding.
  • 1 medium onion, chopped
  • 2 cups chicken broth Add a splash more if the dish looks dry before baking.
  • 1 cup shredded cheese (optional) The cheese is optional.
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the sausage and onion over medium heat until browned. Drain excess fat.
  3. In a large mixing bowl, combine the cooked sausage, diced potatoes, green beans, chicken broth, salt, and pepper.
  4. Pour the mixture into a greased casserole dish.
Baking
  1. Cover with aluminum foil and bake for 45 minutes.
  2. Remove the foil, sprinkle cheese on top if using, and bake for an additional 15 minutes or until the potatoes are tender and the cheese is melted.
Serving
  1. Let cool slightly before serving.
  2. Serve hot from the oven. Cut into squares and scoop onto plates. A simple green salad or crusty bread goes well with this dish. Offer ketchup or hot sauce for anyone who likes extra flavor.

Notes

Let the casserole cool to room temperature. Cover and refrigerate for up to 3 days. Reheat in the oven at 350°F (175°C) until warm or heat single portions in the microwave for 1–2 minutes. Let it rest 5 minutes after baking so it sets and is easier to serve.
