Preparation
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, mix the flour, baking powder, salt, and pepper.
- In another bowl, whisk together the milk, eggs, and vegetable oil.
- Combine the wet ingredients with the dry ingredients and stir until just combined.
- Fold in the cooked sausage and shredded cheese.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until golden brown and a toothpick comes out clean.
- Let them cool for a few minutes before removing from the tin.
Serving
- Serve the muffins warm. Spoon hot gravy over each muffin.
- Add a side of fresh fruit or a light salad.
Notes
Do not overmix the batter. Stir until just combined. Fill muffin cups about 2/3 full for best rise. Make the gravy while muffins bake to serve hot.
