Ingredients
  

For the filling
  • 4 links Italian sausage links (mild or spicy) Use mild or spicy sausage to match your taste.
  • 2 pieces bell peppers, sliced (red and green)
  • 1 piece onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp crushed red pepper flakes (optional for heat) Add more for extra spice.
  • Salt and pepper to taste
For assembly
  • 12 pieces slider buns You can use hoagie or Hawaiian rolls for a sweeter option.
  • 1 cup marinara sauce (optional) Serve on the side for those who want it.
  • Fresh basil or parsley for garnish (optional) Adds freshness and color to the dish.

Method
 

Preparation
  1. Heat a large skillet over medium heat. Remove the sausage links from their casings and crumble the sausage into the pan.
  2. Cook until browned and fully cooked, about 5-7 minutes. Set aside.
  3. In the same skillet, add olive oil and heat. Add the sliced bell peppers, onions, and garlic.
  4. Sauté for 5-7 minutes until soft and caramelized. Season with oregano, crushed red pepper flakes (optional), salt, and pepper.
  5. Add the cooked sausage back into the skillet with the peppers and onions, stir, and cook for another 2-3 minutes to combine flavors.
  6. Toast the slider buns in the oven or on a grill pan until golden brown.
Assembly
  1. Assemble the sliders by spooning the sausage and peppers mixture onto the bottom half of each slider bun.
  2. Optionally, top with marinara sauce.
  3. Garnish with fresh basil or parsley, then top with the other half of the bun and serve immediately.

Notes

Store the sausage and pepper mix in an airtight container in the fridge for up to 3 days. Keep buns in a separate bag to maintain freshness. Reheat the mix before serving, and toast the buns again for the best texture. Don't store assembled sliders for long, or the buns will get soggy.
