  • 1 kg mutton, cut into pieces
  • 2 large onions, finely sliced
  • 4 tomatoes, chopped
  • 2 tablespoons ginger-garlic paste
  • 2-3 green chilies, slit Adjust according to taste
  • 1 teaspoon turmeric powder
  • 2 teaspoons cumin powder
  • 2 teaspoons coriander powder
  • 1 teaspoon garam masala To sprinkle before serving
  • Salt to taste
  • Fresh cilantro for garnish
  • Oil for cooking

Method
 

Preparation
  1. Heat oil in a large pot and add sliced onions. Fry until golden brown.
  2. Add ginger-garlic paste and green chilies, sauté for a minute.
  3. Add the mutton pieces and cook until they are browned on all sides.
  4. Stir in tomatoes, turmeric, cumin, coriander, and salt. Cook until the tomatoes soften.
  5. Cover and let it simmer on low heat until the mutton is tender, stirring occasionally.
  6. Once cooked, sprinkle garam masala and mix well.
  7. Garnish with fresh cilantro and serve hot with rice or naan.

Notes

Let the mutton cool to room temperature. Store in an airtight container in the fridge for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 2 months.
