- Heat oil in a large pot and add sliced onions. Fry until golden brown.
- Add ginger-garlic paste and green chilies, sauté for a minute.
- Add the mutton pieces and cook until they are browned on all sides.
- Stir in tomatoes, turmeric, cumin, coriander, and salt. Cook until the tomatoes soften.
- Cover and let it simmer on low heat until the mutton is tender, stirring occasionally.
- Once cooked, sprinkle garam masala and mix well.
- Garnish with fresh cilantro and serve hot with rice or naan.
Notes
Let the mutton cool to room temperature. Store in an airtight container in the fridge for up to 3 days. For longer storage, freeze in a freezer-safe container for up to 2 months.
