  • 3-4 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup beef broth

Preparation
  1. Preheat your oven to 350°F (175°C). Pat the beef roast dry with paper towels to remove excess moisture.
  2. In a small bowl, combine salt, pepper, garlic powder, onion powder, thyme, and rosemary. Rub this spice mixture generously all over the beef roast.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the roast on all sides until nicely browned, about 2–3 minutes per side.
Cooking
  1. Transfer the skillet to the preheated oven. Pour beef broth into the bottom of the pan if using a roasting pan.
  2. Roast the beef until it reaches your desired level of doneness, using a meat thermometer for accuracy. Aim for an internal temperature of 135°F (57°C) for medium-rare.
Serving
  1. Let the roast rest for 10-15 minutes before slicing to ensure the juices redistribute.

Notes

Use a meat thermometer for the best results. Customize the seasoning blend to suit your preferences, and consider making gravy with the pan drippings.
