Preparation
- Preheat your oven to 350°F (175°C). Pat the beef roast dry with paper towels to remove excess moisture.
- In a small bowl, combine salt, pepper, garlic powder, onion powder, thyme, and rosemary. Rub this spice mixture generously all over the beef roast.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the roast on all sides until nicely browned, about 2–3 minutes per side.
Cooking
- Transfer the skillet to the preheated oven. Pour beef broth into the bottom of the pan if using a roasting pan.
- Roast the beef until it reaches your desired level of doneness, using a meat thermometer for accuracy. Aim for an internal temperature of 135°F (57°C) for medium-rare.
Serving
- Let the roast rest for 10-15 minutes before slicing to ensure the juices redistribute.
