Ingredients
  

For the Casserole
  • 1 package vegan sausage
  • 6 cups cubed bread Use day-old bread for the best texture.
  • 1 cup plant-based milk
  • 1 cup chickpea flour Gives a firm, egg-like texture.
  • 1 teaspoon turmeric For color and flavor.
  • to taste Salt and pepper Adjust to preference.
  • 1 cup spinach, chopped
  • 2 tablespoons nutritional yeast (optional) For added flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine chickpea flour, plant-based milk, turmeric, salt, and pepper to form a batter.
  3. In a greased casserole dish, layer the cubed bread, followed by chopped spinach, diced bell pepper, onion, and vegan sausage.
  4. Pour the chickpea batter evenly over the top, ensuring the bread is well soaked.
  5. Let it sit overnight in the refrigerator.
Baking
  1. The next morning, bake in the preheated oven for 30-35 minutes until the top is golden brown and set.
  2. Serve warm and enjoy!

Notes

For a different taste, try smoked vegan sausage or add garlic powder. Adjust salt after baking if needed.
