Ingredients

Dry Ingredients
  • 2 cups rolled oats
  • ¼ teaspoon salt
  • ½ cup chocolate chips (semi-sweet or dark)
  • ½ cup chopped nuts (optional, e.g., almonds or walnuts) Add for extra texture and flavor.
Wet Ingredients
  • 1 cup creamy peanut butter Use creamy for a smoother mix.
  • ½ cup honey or maple syrup Can be substituted with maple syrup for a different flavor.
  • ½ teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking pan by lightly greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine the rolled oats and salt, stirring well to evenly distribute the salt.
  3. In a separate bowl, blend the creamy peanut butter, honey or maple syrup, and vanilla extract until smooth and creamy.
Mix and Bake
  1. Pour the wet ingredients into the bowl with the dry oats. Stir thoroughly until the mixture forms a cohesive dough.
  2. Gently fold in the chocolate chips and optional chopped nuts.
  3. Transfer the mixture into the prepared baking pan and press down firmly and evenly.
  4. Bake for 20-25 minutes, or until the edges start turning golden brown.
  5. Remove from the oven and let cool in the pan for about 20 minutes before transferring to a wire rack to cool completely.
  6. Once fully cooled, cut into squares or bars.

Notes

Press the mixture firmly into the pan so bars hold together well. If the mixture is too dry, add a tablespoon of honey or peanut butter. If too wet, add a few extra tablespoons of oats. Store in an airtight container for up to a week or freeze for longer preservation.
