Chicken and Coating
  • 4 pieces boneless, skinless chicken breasts Pounded to even thickness.
  • 1 cup grated Parmesan cheese Use fresh grated for best taste.
  • 1 cup breadcrumbs Panko can be used for a crunchier crust.
  • 2 tablespoons Italian seasoning
  • 2 tablespoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup mayonnaise Can be substituted with beaten egg.
  • 1/4 cup Dijon mustard Spicy mustard can be used for a kick.
  • 2 tablespoons olive oil For drizzling before baking.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. In another bowl, combine the mayonnaise and Dijon mustard.
  4. Dip each chicken breast in the mayonnaise mixture, then coat with the breadcrumb mixture, pressing the crumbs onto the chicken to adhere.
  5. Place the coated chicken breasts on a greased baking sheet.
  6. Drizzle with olive oil.
Cooking
  1. Bake in the oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown.

Notes

Serve hot with a green salad, steamed vegetables, or mashed potatoes. For extra crisp, broil for 1–2 minutes at the end, watching closely.
