  • 4 pieces chicken thighs
  • 4 pieces chicken drumsticks
  • 1 cup buttermilk For soaking the chicken
  • 1 cup breadcrumbs Can use panko for added crunch

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, soak the chicken in buttermilk for at least 30 minutes.
  3. In another bowl, mix breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
  4. Remove the chicken from the buttermilk and coat in the breadcrumb mixture.
Cooking
  1. Place the coated chicken on a baking sheet and spray lightly with cooking spray or drizzle with olive oil.
  2. Bake for 35-40 minutes or until the chicken is crispy and cooked through, reaching an internal temperature of 165°F (74°C).
  3. Serve hot.

Notes

Pat the chicken dry before coating to help crumbs stick. Don't skip the buttermilk soak as it keeps the meat tender. Use a wire rack on the baking sheet if you want crisp on all sides.
