Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 3 tbsp cornflour (corn starch)
  • 1 tsp cinnamon powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup icing sugar
  • 1 medium orange peel, finely grated From one medium orange

Method
 

Baking Preparation
  1. Set your oven to 350°F (175°C) to preheat.
  2. In a mixing bowl, beat the unsalted butter and icing sugar together until light and fluffy, about 3-5 minutes.
  3. Mix in the finely grated orange peel.
  4. In a separate bowl, whisk together all-purpose flour, cornflour, cinnamon powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until a smooth dough forms.
  6. Scoop tablespoon-sized portions of the dough, roll into balls, and place them on a baking tray lined with parchment paper. Flatten slightly.
Baking
  1. Place the tray in the preheated oven and bake for 12-15 minutes until the edges are lightly golden.
  2. Remove cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Store cooled cookies in an airtight container at room temperature for up to 4 days. For longer storage, freeze them for up to 1 month.
