Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together honey, Dijon mustard, olive oil, salt, and pepper.
  3. Place the chicken thighs in a baking dish and coat them with the honey mustard mixture.
  4. Add the diced potatoes around the chicken in the baking dish.
  5. Drizzle any remaining marinade over the potatoes.
  6. Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.

Notes

Cool leftovers to room temperature and place in an airtight container. Store in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes to keep the skin crisp. Check internal chicken temperature: 165°F (74°C) is safe.
