  • 1 lb Chicken breast or thighs, boneless skinless Cut into even pieces for even cooking.
  • 2 cloves Garlic Minced.
  • 1/2 unit Onion Diced.
  • 2 cups Chicken broth
  • 1 cup BBQ sauce
  • 1 cup White rice, long-grain Rinse before using.
  • to taste Salt and pepper
  • 2 tbsp Olive oil For sautéing.

Method
 

Cooking
  1. In a large pan, heat olive oil over medium heat.
  2. Add diced onion and minced garlic; sauté until fragrant.
  3. Add the chicken to the pan and season with salt and pepper. Cook until browned.
  4. Stir in the BBQ sauce and chicken broth, bringing to a simmer.
  5. Add the rice, cover, and let it cook on low heat for 20-25 minutes or until rice is tender and has absorbed the liquids.
  6. Serve warm and enjoy!

Notes

For extra flavor, brown the chicken well before adding the liquids. Use a tight-fitting lid to keep steam in while the rice cooks. This dish stores well in the fridge for meal prep.
