  • 2 pounds mutton, cut into cubes
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 4 cups beef broth
  • 3 cloves garlic, minced
Seasonings
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 leaf bay leaf

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and garlic, and sauté until softened.
  3. Add the mutton cubes and brown on all sides.
  4. Stir in the tomato paste, thyme, bay leaf, salt, and pepper.
  5. Pour in the beef broth and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 1.5 to 2 hours, until the mutton is tender.
  7. Add carrots and potatoes, and cook for an additional 30 minutes.
  8. Taste and adjust seasoning as needed before serving.

Notes

Serve hot in deep bowls. This stew pairs well with crusty bread or steamed rice. Add a simple green salad on the side for freshness. Brown the mutton thoroughly for better flavor, and do not rush the simmering for tender meat.
