Mutton Chops in Green Spice Mix

Ingredients
  

For the marinade
  • 6 pieces Mutton Chops
  • 1 handful Coriander Leaves Fresh
  • 5-6 pieces Chillies Green
  • Few pieces Mint Leaves Fresh
  • 1 inch Ginger Fresh
  • 1 pod Garlic Fresh
  • to taste Salt
  • 1 tablespoon Lemon Juice From 1 lemon
For cooking
  • 2 tablespoons Oil
  • 5-6 pieces Garlic Smashed
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Black Pepper Powder
  • 1 teaspoon Cumin Powder
  • 1/2 teaspoon Garam Masala
  • 1/4 cup Water

Method
 

Preparation
  1. Grind coriander, chillies, mint, ginger, and garlic to a fine paste.
  2. Marinate mutton with salt, green masala, and lemon juice for 30 minutes.
Cooking
  1. Heat oil in a pressure cooker. Add smashed garlic and fry until light golden brown.
  2. Add turmeric powder and mix well. Add mutton chops and black pepper powder. Fry on high heat for 1-2 minutes.
  3. Add cumin powder, garam masala, and water.
  4. Pressure cook for 1-2 whistles.
  5. Dry excess moisture.
  6. Garnish with chopped coriander, lemon, and onion rings.

Notes

Grind the green masala fresh for the best flavor. Marinate for at least 30 minutes; longer if time allows. Do not overcook in the pressure cooker. One or two whistles is enough for regular chops. Dry excess water at the end on high heat to get a nice coating on the chops. Use fresh lemon juice at the end for a bright, fresh taste.
