  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 cup peanuts (unsalted) Dry-roasted peanuts can also be used.
  • 1 tablespoon butter Butter is recommended for better flavor.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda Necessary for the brittle texture.

Preparation
  1. In a large microwave-safe bowl, combine sugar, corn syrup, and salt. Stir until well mixed.
Cooking
  1. Microwave on high for 4-5 minutes, stopping to stir every minute until the mixture is bubbly and reaches a light golden color.
  2. Stir in the peanuts and microwave for an additional 2-3 minutes or until the mixture is a deep golden brown.
  3. Carefully remove from the microwave and stir in the butter, vanilla, and baking soda. The mixture will bubble up.
  4. Pour the mixture onto a buttered baking sheet and spread it out evenly.
  5. Allow to cool completely before breaking into pieces.

Notes

Use a large bowl to avoid spills when the mixture bubbles. Store in an airtight container at room temperature. It will stay fresh for 1 to 2 weeks. Work quickly with baking soda as the mixture sets fast.
