Preparation
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, panko breadcrumbs, egg, crumbled feta cheese, finely chopped red onion, chopped sun-dried tomatoes, olive oil, dried oregano, garlic powder, dried dill, salt, and black pepper.
- Mix all the ingredients well until evenly distributed.
- Roll the mixture into small golf ball-sized meatballs and place them on the prepared baking sheet.
Baking
- Bake in the preheated oven for 25 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
- Remove from the oven and sprinkle with fresh mint or parsley.
Notes
Cool meatballs to room temperature before storing. Store in the fridge for up to 3 days or freeze for up to 3 months. Reheat in the oven or microwave.
