  • 4 pieces Sweet potatoes Choose even-sized potatoes for even cooking.
  • 2 tablespoons Olive oil Rub on skins for flavor.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.
Toppings
  • 1 can Black beans Warm before adding.
  • 1 cup Corn Fresh, frozen, or canned work.
  • 1 piece Avocado Diced.
  • 1/2 cup Sour cream or Greek yogurt For a creamy topping.
  • 2 tablespoons Chives or green onions Chopped, for garnish.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the sweet potatoes, then pierce them with a fork.
  3. Rub sweet potatoes with olive oil, and sprinkle with salt and pepper.
Baking
  1. Bake sweet potatoes for about 45-60 minutes, until tender.
  2. In the last 10 minutes of baking, prepare the toppings by heating black beans and corn together.
Serving
  1. Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
  2. Top with heated black beans, corn, diced avocado, sour cream or Greek yogurt, and sprinkle with chives or green onions.
  3. Serve warm and enjoy!
