  • 1 pound gnocchi Store-bought gnocchi can be used.
  • 2 pieces chicken breasts Make sure not to overcook.
  • 2 tablespoons olive oil For cooking the chicken.
  • 3 cloves garlic, minced Adds flavor to the sauce.
  • 1 piece lemon, zested and juiced Adjust for flavor preference.
  • 1 cup chicken broth Used for the sauce.
  • 1/2 cup heavy cream Makes the sauce creamy.
  • to taste Salt and pepper For seasoning.
  • to taste Fresh parsley, chopped For garnish.

Method
 

Cooking
  1. Cook the gnocchi according to the package instructions. Once done, set them aside.
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
  3. Add the chicken to the skillet and cook until browned and fully cooked, about 6-7 minutes on each side. Remove the chicken and set it aside.
  4. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  5. Add the lemon zest, lemon juice, and chicken broth to the skillet. Bring everything to a simmer.
  6. Stir in the heavy cream and let the sauce thicken slightly.
  7. Slice the cooked chicken and add it along with the gnocchi to the skillet. Mix everything to combine and reheat.
  8. Finally, garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for 2 to 3 days. Reheat gently in a pan over low heat.
